This process involves slow fermentation of white garlic bulbs at controlled humidity and temperatures, which promotes enzymatic reactions and breakdown of substances in garlic. All these conditions lead to a change in the color of garlic to dark brown or black, as well as a change in aroma and smell, which is less pungent and milder, while also acquiring a slightly sweet-caramel aroma. In addition, the fermented form of garlic is gentler on digestion, meaning it is easier to digest.
