Agave sugar is a natural sweetener obtained from the agave plant (Agave salmiana). It is a succulent plant that thrives mainly in dry and predominantly arid areas of Mexico and the southern part of the USA, where it is used for making tequila, mezcal, extracting inulin, or as a sweetener in this case.
Both agave syrup and sugar are made from the agave juice found in the center of the plant. Both sweeteners have similar properties and unique benefits, among which their composition is definitely included - at least 95% is fructose!
Furthermore, it is about 1.5-2 times sweeter than regular sugar, so you can use less of it to achieve the same level of sweetness.
It also has a lower glycemic index (GI) than regular sugar, which means it raises blood sugar levels more slowly, making it a popular choice among diabetics.
