Chitosan is a natural polysaccharide obtained from chitin - a substance found in the outer skeletons of crustaceans such as marine crabs, lobsters, and shrimp. It is formed through a process of deacetylation, where the acetyl groups are removed from chitin, making chitosan soluble and suitable for various purposes.

Its history dates back to the early 19th century when the French chemist Henri Braconnot first isolated chitin from mushrooms. Over the years, its use has spread to various fields, especially in agriculture, as well as the food and cosmetic industries.

As an interesting fact, in Japan, chitosan became part of functional food in the 1980s, mainly due to its connection with natural fibers.
